Fish Tacos (Wild Caught Cod or Tofu) – The breading, made from ground cashews, smoked paprika, Old Bay seasoning, and nutritional yeast packs so much flavor that these tacos taste just as awesome whether you choose Fish or Tofu. 5-6 sticks are served on the side of shredded cabbage, red onion, carrot, jalapenos, cilantro, two gluten-free spinach tortillas, and a side of chia tartar sauce. Your co-workers will be very jealous. (Choose Fish or Tofu)

Pecan Chicken with Grilled Asparagus-Veggie Medley – Happy, free-roaming, well tended chickens (Gerber Farms, Kidron, Ohio) make all of our chicken dishes healthier and tastier than most breast fillets you can get. We marinate ours overnight before breading them in an irresistible pecan based crust. Lightly sauteed asparagus, sliced peppers, onions, and perhaps more veggies are served on the side.

Creamy Veggie Lasagna – A new spin on lasagna, with a white sauce base reminiscent of alfredo, herbs, lots of veggies, and zucchini noodles. We’ll make this one big and tall, and top it with Cabot’s naturally lactose-free cheese. This is a first run for us, and your feedback is appreciated. (Choose Cheese or No Cheese)

Broccoli-Cauliflower-Chickpea-Chicken or Tofu Curry – Well, we didn’t save any words for the description. Simple and effective curry without the use of heavy cream and too much salt. We do add some, but shouldn’t YOU be able to choose how much sodium you want in your food? We think so. (Choose Chicken or Tofu)

Brazilian Chicken or Cashew Stew – This one gets great reviews every time, and it only comes around once a season. Get yours! The broth is thick and creamy, the flavor is right on the money, yet exotic, and the result is both satisfaction and a desire for another bowl. (Choose Chicken or Vegan)

Arugula-Watermelon Salad with Pine nuts and Balsamic Glaze – It has been a full year since we did this salad. The tangy glaze, juicy watermelon, peppery arugula, and creamy pine nuts, along with optional feta, are a winning combination. We’ll make sure to get this one in at least one more time before salad season is over. (Choose Cheese or No Cheese)

Broccoli-Caramelized Onion Quiche – Onions do amazing things when you saute them for a long time and de-glaze the flat-top with a dash of Sherry. We take these onions and lightly sauteed broccoli and load them into a quiche. We know that the world needs more veggies, so we’ll make these overflowing with vitamin C, calcium, B-vitamins, and some A and D, too.

Sauteed Multi-Veggie Omelet – What did we just say about veggies?  It’s true!! Whether you are a meat eater, vegan, gluten-free or not, everyone agrees that we need more vegetables, and this omelet delivers a great sources of EVERY vitamin. It’s not a coincidence that it is very colorful as well. Eat the rainbow for breakfast and have a beautiful day!

Blueberry MuffinOur original carb-free muffin. This one uses greek yogurt and butter in the recipe, for those concerned about dairy. this gives it a super tasty savory counterpoint to the sweetness. Reminds us of grandma’s blueberry muffin recipe, without any of the sugar.

Roasted Garlic-Red Pepper Hummus – A pint of this flavorful hummus is great as a small meal, snack, or packed lunch at work. Comes with veggie dippers like broccoli, carrots, and cauliflower, and some toasty Nut Thin crackers. $10/pint with dippers (Serves 4)

Kale Lemonade – Some of you have been nudging us to bring this favorite back. To those who have never tried it, it may sound weird, but you’ll be surprised how refre3shing and NOT nasty this juice is. The lemon and ginger cuts through the bitter kale, and the apples justify the whole experience. A great way to get that chlorophyll and vitamin A!  $15/qt.

Chicken-Cheese-Spinach Quesadilla – Two mini quesadillas, served with a side of organic salsa, filled with specially seasoned Amish chicken, Cabot’s/mozzerella cheese mix, light black beans, and fresh spinach. $10/two quesadillas

Kid Fish Filet with Chia Coleslaw – Similar to our fish tacos, but not as complicated. Simply a wild caught fish fillet in our awesome fish breading, and a side of coleslaw. $10

Ice Cream Brownies – Refined sugar and dairy-free thin brownies make a sandwich out of our vegan icecream. All items house made from natures candy (dates, 97% dark chocolate, coconut milk, almond meal, stevia, and vanilla bean). Whoa dude….  $4
