Menu notes 12/17/13

Good evening!  Chef Brandon here. I am taking some deliveries tonight, so my normal Tuesday routine of compiling all of the nutritional information must wait until I get home. Expect it first thing tomorrow. In the meantime, here are the heating instructions for all of the food to get you started.

Portobello Mushroom Pizza – Remove lid and bake at 350 for 10-15 minutes, until cheese is bubbly and beginning to brown. Mushrooms give off juice as they cook, so this pizza will require a fork and a knife.

Chicken Marsala – The chicken is fully cooked, so we are only reheating this dish. You can leave the lid on to steam heat at 400 for 10-12 minutes. If you’d like, you can then remove the lid and finish off for another 5 minutes.

Roasted Veggie Pesto Pasta – Remove lid and pesto and bake at 350 for 10 minutes. May also be reheated in a microwave safe container for 2-3 minutes on reheat setting.  Mix the pesto in after the pasta and veggies are hot. You may also pour everything into a saucepan and heat on medium for 6 minutes, stirring occasionally.

Chipotle Chicken/Tofu Enchiladas – Remove lid and bake at 350 for 15-20 minutes, until cheese is slightly browned. CAUTION: The sprouted grain tortilla will stick to the lid, be careful to not throw away the tortilla/cheese.

Veggie Stew – Heat in saucepan or microwave until hot.

Kids Chicken Salad – I have never seen this happen before, but our go to gluten-free bakery (Eban’s) was out of gluten free bread for 3 days straight. We had to improvise, so we included nut-thins. You can make mini sandwiches out of those, or even use the chicken salad as a dip. Sorry for the inconvenience. Many things in this industry are simply out of our control.

Kids Sketti with free-range-grassfed Bison meatballs – Remove lid and bake at 400 for 13:23 minutes.

Quiche! (Large and Breakfast Pack size) – The quiche is fully cooked and simply needs to be heated before serving. I like it in a toaster oven for 10 minutes at 300.

Strawberry/Vanilla Oatmeal – May be microwaved on reheat for 3 minutes, or poured into a saucepan and heated on medium-high for 5 minutes, stirring frequently.

Veggie Omelet – Put a dab of butter or oil into a small skillet and heat to just between low/medium. Pour contents of container into skillet and fuhgeddaboutit for 5 minutes. Then, flip and cook the other side for 2 minutes. OR in an oiled skillet, place contents of container and cook on medium-high for 2-3 minutes, stirring constantly.
