Main Menu

Braised Greek Tofu or Turkey Medallions w/ marinated veggies: Note: Turkey is flash seared only and not fully cooked! Please observe heating instructions closely. Remove lid and bake in a preheated oven at 375 for 15-20 minutes. This dish is freezer friendly, please adjust cooking time if frozen.

Deluxe Black Bean Nacho Salad – The black bean mix can be heated if you wish. The little side brown paper bag contains the nachos and some yummy house-made guacamole. The “sour cream” is dairy free and made from raw cashews and seasonings. That really tasty drizzle on top? It’s a pomegranate/chipotle reduction I came up with, since there is no dressing on this salad. I thought it was pretty tasty so we will be seeing that again pretty soon.

Eggplant Parmesan with Spaghetti Squash – Remove lid and pour sauce over eggplants and noodles, then bake at 350 for 10-15 minutes.

Pecan Crusted Chicken w/Garlic Roasted Mashed Cauliflower: Note: Chicken is not fully cooked, please observe heating instructions. Remove lid and bake at 350 for 25 minutes, or until chicken is fully cooked. Thickness of breasts varies, be sure to check before eating. If you have a food thermometer, a minimum temp of 165 should be reached.

Butternut Squash/Coconut/Lime Soup (V) – Simply heat in a saucepan or microwave until hot.

Chicken or Veggie Gumbo – Simply heat in a saucepan or microwave until hot.

Italian Quinoa Stuffed Collard Green Rolls – Remove lid and cover with foil. Bake at 400 for 15 minutes, then uncover for an additional 5.

Weight Loss Menu

Cauliflower Crust Veggie Pizza: These crusts turned out great. We’ll be offering a full size version of this soon. Preheat oven to 400 and place pizza directly on middle rack for 10 minutes or until cheese is melted and just starting to brown.

Seared Chicken Breast w/Garlic Roasted Mashed Cauliflower: Chicken is not fully cooked, please observe heating instructions. Remove lid and bake at 350 for 15 minutes, or until chicken is fully cooked. Thickness of breasts varies, be sure to check before eating. Veggie Cupcake Frittata – Reheating in oven/toaster oven recommended at 350 for 5-8 minutes.

Sauteed Greens/Red Pepper/Chives Omelet – Simply pour into a lightly oiled skillet and cook to desired consistency

Blueberry-Nut Muffins – Keep these little guys refrigerated.  I like them warmed slightly with a dab of butter.

Breakfast Package

Carrot Cake Steel-Cut Oatmeal – Pour contents into saucepan and cook on medium heat for 5 minutes, or in a microwave on reheat for 3-4 minutes.

Veggie Cupcake Frittata – Reheating in oven/toaster oven recommended at 350 for 5-8 minutes.

Banana Flax Granola Pancakes – Place pancakes into your toaster for two rounds, or in the oven at 350 for 5 minutes. Very freezer friendly, by the way.

Kids Menu

Kid’s Classic Sketti – Everything is fully cooked. Simply pour contents into a saucepan with a dash of water and heat lightly. May also be microwaved on reheat (in a microwave safe container).

Kids Pizza – Bake directly on lower oven rack for 8-10 minutes at 350

Kids Amish Chicken Nuggets – I realized after I made these guys that I accidentally omitted the salt, so they may need a sprinkle or two. You can bake them at 400 for 10 minutes. Also very freezer friendly.

Better for you Sweets

Gluten/Dairy/Refined Sugar-Free Dark Chocolate Brownies – Eat them as is, or slightly warmed.
